WHere is a simplified version of a beverage from the seasonal drinks list. Designed as a batch premix which is bursting full of tastes of a Christmas time, making it perfect for your celebration. Any leftover cordial to use in morning drinks, desserts, or for another batch of this cocktail.

Makes enough for 10 servings
For the Clementine Cordial (yields 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g caster sugar
To make the Drink (produces 850ml, enough for 10)
400ml good quality vodka
100ml classic gin
150ml peach liqueur
200ml clementine syrup (see above)
Whole cranberries, for garnish
Mandarin essential oil, for finishing
Instructions
Making the Citrus Syrup: Combine the listed components inside a pan, heat until it reaches a gentle boil, mixing so the sugar melts. Then, remove from the burner and let it to cool down fully. Transfer into a sealable bottle, seal and refrigerate it in the refrigerator, it will last for around one month.
Preparing the Premix: Mix every spirits and syrup into one big jug, let it rest for one hour, then pass it through , ideally through a fine cloth, making it perfectly clear.
When ready to serve: Add 85ml of the premix into a stirring glass containing ice, gently stirring lightly for a minute to chill. Filter into an cold coupe glass or a similar vessel, decorate with the cranberries and finish using a brief mist of mandarin oil over the top.
